Enhance the flavor of your breakfast and rise up the nutrients density of this meal to the next level. Here is a way to welcome cauliflower at your family table early morning and still being loved by them.
This recipe will bring you enough proteins for the morning because of the eggs, the turmeric is a good anti inflammatory and antioxidants as well as the cauliflower. There is nutritional yeast which is loaded of vitamin B. I use a brand which is fortified with B12, it’s always good to take it in supplements if you don’t eat much animal proteins. Nutritional yeast is also rich in iron, zinc and selenium.
Ingredients (about 10 patties): 1 small head of cauliflower, 2 eggs, 70 gr almond meal, 1 tbs nutritional yeast, 1 ts turmeric, 1 tbs psyllium husk, salt, pepper and ghee or coconut oil for cooking.
Steam the cauliflower florets and mash them with your food processor. In a bowl, mix the mashed cauliflower with the beaten eggs, the nutritional yeast and the rest of the ingredients. Grease your pan with ghee or coconut oil and cook 2 or 3 patties at a time. One pattie is about one tsp and you form it nicely in the pan with two spoons. You let it cook for 2 or 3 minutes on each side.
You can cook them the day before and warm them with steam the morning after. I like to eat them with my basil pesto.
