Oat chocolate cookies

Low glycemic index treat: interesting if you need to bite something with your tea without pushing your insulin up too much and sweet enough to satisfy your taste buds for the rest of the day. If you are using dark chocolate 90% you will adapt your palate to less sugar taste and more intense savories. This helps you to get rid of eating pure sugar. Little by little, you will find that all you buy is too sweet and boring and that’s how you will starve for nutrients dense food, even when it’s concerning snacks.

I picked up this recipe on detoxinista.com but I reduced the sugar (she uses a lot of almond butter and coconut sugar) and here is the result.

Ingredients: 2 tbsp chia seeds + 6 tbsp water, 150 gr almond butter, 1/2 avocado, 60 gr pitted dates + 70 ml water, a pinch of vanilla powder, a pinch salt, a pinch baking soda, 2 tbsp apple cider vinegar, 80 gr oats, 100 gr dark chocolate 90% cut in chips.

How: 

-Preheat your oven on 180 C and remove the racks to line them with baking paper.

-Mix the chia seeds and the water in the big bowl you will use for mixing all ingredients and leave for 5 minutes.

-In the grinder, mix the dates and the water until the syrup is formed.

-Whisk all together the chia seeds, almond butter, avocado, dates syrup, vanilla powder, salt, baking soda and vinegar. You should obtain a mixture looking like a cookies dough.

-I used a flower mold to fill the dough but you can just work with one tbsp and flatten it a little bit.

Cook for 9 minutes and that’s it! (My oven is quite hot, check yours).
