Don’t be misled, it’s not a sweet! It’s more like a meal packed in a bar. Constantly working on new recipes for people who are used to be in a hurry for eating, these bars could help you recovering from your sport practice or having a quick energy boost for breakfast. The consistence of the bars is soft. If you want them crunchier, you should try to squash the dough more and bake it longer.
Ingredients (25 squares): 150 gr cooked chickpeas, 60 gr cooked quinoa, 40 gr shredded carrot, 15 gr freshly ground flaxseeds, 10 gr psyllium, 10 small dates, 5 tbsp coconut oil, 5 tbsp water, 3 tsp cinnamon, 1/2 tsp salt.
How:
1/Preheat the oven at 150°C.
1/Mix all the ingredients in your food processor at high speed until all the ingredients form a wet dough.
2/Squash the dough on a parchment paper with your hand or with a rolling pin, around 5 mm of thickness.
3/ Cut the dough in squares as you like to eat them.
4/Bake in the oven for 20 minutes.
