Pancake is usually not a nutrient dense choice: flour, milk, eggs or similar ingredients are not really dense food which allow us to have energy for long hours. BUT some flours are more interesting than others. Lupin flour is one of them. The yellow lupin seeds are high in protein with 40% compared to wheat berries which have 13% of protein. Furthermore, the taste has a quite interesting character. It worth a try.
Ingredients for 4 small pancakes (1 person): 30 gr lupin flour, 15 gr almond meal, 6 gr coconut fine shredded flakes, 1 egg, soya milk as you like the consistency (a bit less liquid than with traditional pancakes).
I like them with banana and melted dark chocolate…. Enjoy!
