Crunchy, chocolat-ish, peanut-ish flavor, dried cranberries adding some chewy texture… You will wait for that time to serve yourself more of this snack. I created that recipe with ingredients and textures I wanted to meet for that afternoon. This first trial is not bad BUT if you are waiting for something very sweet and very glued, you defenitely need to add much more honey or other kinds of sugar. To make it reasonably compact and comfortable to eat, I’ve opted for more saturated fats than sugars.
So at this stage, this recipe is not a school box option …. or your child will hate you… If everything fall apart you can always use it as a granola mix in a soja yogurt or any vegetable milk. I kept mine in square bars.
Before starting, be sure to soak your nuts. Always have soaking nuts in a corner of your kitchen, it is so much more nutritious and healthier. If finally you don’t include them in any recipe, you can let them dry between two paper towels, change once after a few hours and you have a ready everyday snack. I keep them open air, under a paper.
Ingredients: the night before, soak all together : 100 gr peanuts, 100 gr almonds, 30 gr pumpkin seeds, 15 gr sunflower seeds, 40 gr organic dried cranberries. Throw the water and rinse very well.
How: Preheat your oven at 150°C.
-In a small bowl: mix 2 big Tsp grounded cardamom, 2 big Tbsp unsweetened cocoa powder , 50 gr oats flakes, 35 gr rice flour.
-In a small saucepan, melt together : 15 gr cocoa butter , 1 Tbsp ghee, 1 Tbsp coconut oil, 1 Tbsp honey, 1 pinch of salt.
-When the fats are melted, pour it onto the spices and chocolate mix and combine all with a spoon.
-Divide the mixture in two. Place one half in a food processor (blender can work I suppose) to have a smooth dough. Once done, combine both mixtures again in the small bowl, the processed one with the whole nuts. And your dough is ready to be flattened on a parchemin paper. Push well all together with your hands to have a compact form, about 1 cm thick.
-Bake in the oven for about 25/30 minutes. It has to be cooked without being too dark.
-Allow to cool before cutting in bars. Store them in a closed box.
-Fats: only use coconut oil will work as well
-Cardamom: I like it in nuts bar but you can opt for vanilla essence or cinnamon or speculoos spices, anything you like.
