Because Sunday needs to be slow and smooth… We take time to prepare pancakes, we want to innovate, we have time to be a bit more creative than usual… And finally, savouring these gluten free matcha pancakes gives the perfect tone for a perfect indulging Sunday. Enjoy!
Ingredients: 1 cup oat flour (gluten free if you like), 1 cup quinoa flour, 1,5 cup soy milk, 15 ml of almond cream, 1 egg, 2 tsp vanilla extract, 1 TBSP matcha powder, ghee for cooking.
How: No need to be long to explain how to mix everything together. I kept this dough quite tick in order to make small pancakes rather than thin crepes. Don’t cook on a too hot pan as you will ruin the color of the matcha… This dough is easy to flip in the pan.
As a brunch, I ate them with black olive tapenade, avocado and lemon juice on top. It made my day!
